Hi guys! It’s one of my favorite days of the week! Today is my day to hang with my awesome college student! She is in the middle of studying for midterms…and she still came to hang out with me and get away for awhile! I love her to pieces! Today I made a pizza for the two of us for lunch…its super easy…and crazy delicious…and totally DIY! But what makes it so yummy is the homemade pizza dough!

I have never owned a cookbook that has sooooo many amazing recipes! Plus she is so talented in other ways! Just a way cool human…go follow her on Insta…you will not be disappointed! I have made probably 12 recipes from her book…each and every one were delicious! And recipes that I thought were intimidating…I actually tried…and discovered they were so doable!! So this cookbook is definitely my go to! I highly recommend it!!
Back to my pizza for two…the dough recipe came from Half Baked Harvest. The recipe is on page 212 (I have it memorized because I can’t even buy pizza dough at the store anymore…it’s that good and that easy)! I made the dough a few days ago and stashed it in the fridge until this morning. I just followed her instructions. Now for my toppings: on one half I spread hummus, and on the other classic pizza sauce. Then sprinkled feta cheese all over. Chopped up cherry tomatoes, mushrooms, and olives and spread around. Threw on some sun dried tomatoes and drizzled the remaining oil from the jar all over. Threw on some baby spinach and shredded mozzarella to top it off. Slid it in the oven at 450 for 10 minutes. BOOM! The perfect pizza! My buddy is vegetarian/vegan so this pizza was made special for her. But you can add tons of meat or whatever you like on you pizza. An awesome DIY pizza! Great for any night of the week! Plus having it on homemade dough gives it a special flare! I hope you go buy Tieghan’s cookbook and I hope you try the dough!
